Even burgers can be an healthy option

I always enjoyed burgers, despite being Italian “pasta & pane“ were second to cold cuts and meet or fish.

After few years living in North Italy, Bologna, I got connected to a group of people promoting macrobiotic food. That was the first time my relationship with "eating animals" was about to be rediscussed.

I do prefer to not give a name to the diet style I adopted and practice but I do promote consuming very low content of animals and derivatives, natural food products are plenty of proteins and vitamins. In my case, digestion benefits are visible when I avoid eating "animals" and my mental health is increased through a more positive thinking. I cannot prove that those benefits are caused only by eating vegetarian but I can state that this is how I feel when I eat natural food only.

Here my favourite burger recipe.

Top the burger as you like and use any kind of bread you like

I love to make focaccina's bread and top the burger with lettuge, dry tomatoes and home made vegan mayonese

COOKING TIME

1 Hour ( While cooking you can call a good friend you never talk with or involve your housemates in the operations )

INGREDIENTS FOR THE BURGER

50g chickpeas flavor

30 g boiled legumes ( black or white beans, lentils or chickpeas)

150ml water

10g Sicilian raw pistachio

fresh rosemarin, tyme, mint and chives

PREPARATION

1 Blend or chrush pistachios and fresh herbs to obtain a thin flavor that you will mix with the boiled legumes, season with salt to your taste.

2 Mix the chickpeas flavor with the water and cook it using low fire for at least 40 minutes after the mix begins to boil, stire constantly and use a non stick pan.

3 When the mix turns into a silky dense cream like potato puree turn the fire off and add the boiled legumes.

4 Move the puree on a surface where it can cool down, the compost has to be spread forming a layer 1 cm thick. If you don't have a surface put the puree in a baking pan or muffin thin and wait untill it is cold and compact.

5 Slide the puree 1 cm thick and bake in the over covering it with extra virgin olive oil or slightly frying it in extra virgin olive oil

6 After frying, let the burger cool down for a minute, grill your bread and add first the mayo then the toppings and the burger. Top it with some more mayo and enjoy it!
